Sticky Rice or Biko Bisaya
We, Sestra’s Kitchen, would like to share with you this Biko recipe with latik or Biko bisaya.
Probably, Filipinos all around the world love this sweet, chewy, sticky, and delicious treat known as Biko.
Also known as “kakanin”, biko is a type of sticky rice cake usually made with a combination of brown sugar and coconut milk. Moreover, we often find this delicious dessert complemented with other sticky rice treats on fiestas, birthday parties, reunions, and other gatherings we Filipinos so love.

Ingredients:
- 3/4 kg. or 4 1/2 cups black/purple sticky rice
- 1/4 kg. Glutinous rice
- 6 cups water
- 3 1/2 cups coconut milk
- 3/4 kg. or 4 cups brown sugar
- 1/2 tsp. Salt
- 1 tbsp. Lemon
Procedure:
Sticky rice
- Combine 3/4 kg. black sticky rice and 1/4 kg. glutinous rice. Then, wash with clean water.
- Add 6 cups of water and cook it over medium heat or in your usual rice cooker.
Latik
- In a big pan, over low heat, add 3 1/2 cups of fresh coconut milk. You can use coconut milk in can (750ml) or 2 big cans (400ml each can) ; or coconut milk powder 400g (dilute to 750ml room temp. water)
- Stir for 30-40 seconds then add the 3/4 kg. of brown sugar. Bring to boil and continue stirring till caramelized.
- Add the cooked sticky rice then stir and mix thoroughly.
- Then, add 1 tbsp. lemon or 4pcs of lemonsito and leave for 1 minute (“paanok” in bisaya)
- Stir again and leave for 3 mins. (paanok napod)
- Then after 3mins. Stir again and leave for another 3 minutes (last paanok nani ^_^)
- Serve and enjoy.
